Keep an eye out in this forum, and some of the other Civ gaming forums (Strategamer, CivDuelZone, Civ4Players), for announcements about pitboss games that are starting up.

Technically speaking Pitboss are just like real time MP games, they can be done via the GS lobby or DirectIP, infact it's best to set them up via DirectIP as GS tends to purge games that are up for days from it's list. But as ID has stated, pitboss games are generally more like PBEM that they are organized in fan sight forums and not in a random fashion in the lobby.
