I need VERY DETAILED step by step instructions on doing these things:

-Changing civilisation names
-Changing leader names
-Changing leader animations (Ie: Give one civ a leader from another)

I've tried all the other tutortials on these things but they just don't say what to do (or at least I can't understand them). What I need is instructions with exactly which Xml file and line of text to edit, etc.

For the first two, you need only look through the XML\Text folder. There you will find the entries for each civ and leader, and the text names used.

The third one is difficult unless you are familiar with all the Art file naming conventions.
