I revisted playing Greece last night, and not long before I manage to circumnavigate the globe, Arabia converted to Islam. It was 800 AD. Why would they wait nearly 200 years before doing so?

You were probably playing the 3000BC start. Probably Islam was founded by a nearby civilization (e.g. Persia, Babylonia, Egypt or even India) and spread to it late. Arabia will always prefer Islam even if there are Christian cities under its control (e.g. when I founded Christianity AND Islam as Ethiopia and it spread to Sana'a, after it flipped to Arabia, even though there was both Islam and Christianity there, Saladin converted to Islam). Turkey, on the other hand, usually has a 30-70% chance of converting to Christianity vs. Islam.

Obviously I was playing the 3000 BC start - I was playing Greece. However, I am pretty sure Islam was founded by the Arabs when they spawned - because I was looking out for it, as I had to dice up beforehand if I wanted to found it myself with my next prophet, having already founded Christianity. I decided not to in the end, and let them do it, and keep m prophet in hand for golden age generation, which in he end , I never bothered with before I completed my UHV. As for Turkey, in my experience they have as good a chance of converting to Judaism as Christianity or Islam.
