Is it easy to set up an AI-only game? It sounds like the depths of CIV-geekdom, but I'm interested to see how the game plays out when I'm not around providing an easy punching bag...

What I did one game was go into world builder and made a one-square island at the very bottom of the map and then surrounded it by mountains. That way they can't get at me and I can't get at them. Then I just let the game play out with the AIs and it was like I wasn't even there for most of the game. Eventually they got boats crossing my culture borders and we made contact, but I declared peace with everybody and that's about the extent of my involvement in it...I didn't build any wonders so that the AI could have aim at all of those. And once I was able to, I just devoted my city to "build" research so I wouldn't have to worry about what to build next.

You can use the AI Autoplay portion of the Revolution Mod. Look for it in the mods forum
