I just downloaded the Fall From Heaven II modpack (whatever the latest version is). All the information seems to have downloaded correctly - the civlopedia works fine. But when I try to start a single player game on a random map, the game crashes and I'm sent back to the desktop. What am I doing wrong?

You need to have BtS patch 3.13 installed.
