Hi, in my game I reached 1951. I'd built the Apostalic Palace AND the UN and the option came up for a diplomatic victory, which I duly won.
Trouble is the game just carried on! Should a screen have come up saying that I was the winner with an option to end the game? Has something gone wrong?

Sounds like you simply got elected Palace Resident or Secretary General; those positions are simply the heads of their respective organizations who propose resolutions, not the head of the world. If you wish to win by diplomacy, you're going to have to propose a Diplomatic Victory resolution.

No, I definitely did that. I proposed the resolution and then won it!
But the game didn't end. Should it have?

If you win you will see some extra sreens (Statistic, Replay, Score) and then be asked if you want to continue ("Just one more turn..."). Hard to miss that.
The "Resolution" you need to win is expicitly called "Something (Diplomatic Victory)" and you not only need to win (get the most votes) you need a "decisive majority" (like 2/3 of all voices), so it's possible that you got - say 55% of the voices, beeing the leading candidate, but did not actually won...
If you are sure you had the right resolution and enought votes.... A while a go i seen someone reporting a similar situation with the spacerace - apparently it can happen rarely, that the game somehow misses the victory...
Do you have a Save you can upload here, so others can check ou / reproduce ? Best would be one short before the resolution came up (autosave maybe ?)

Ah, that might be it. I was listed as the "leading candidate" but my majority was 50-60%.
I've never actually won a DV before so wasn't sure what to expect. I'll see if I can upload a save file later.

FYI, the required majority is 3/4, not 2/3.

Possible. I just wrote 2/3 to emphasize is not just 50% + 1 vote. You can check out the exact number of votes you need in the "Victory->Resolutions"-screen...
