Play as a Euro civ AFTER the colony declares independence? Like, after the american colonies declare independence, you can play as Great Britan, to get it back? Or you have to play as America.

Nope. You always play the colonies. It's the whole premise of the game. The motherlands only really exist in the form of the King and the Royal Expeditionary Force, which comes to kick your rear once you declare independence.

I sometimes found myself to say (in the Revolutionary war)... ok keep this(or these) colonies and let's be done with it when a particular colony was too far or that it didn't hold too much interest, like the Americans did, they didn't try to free the whole Americas from British rule (Antilles, Québec, Nova Scotia remained British).

Halifax and one of the Caribbean colonies (Bermuda, I think) considered joining the thirteen mainland colonies when we declared our independence, but wisely realized that they'd be completely cut off from any outside help, and stayed out of the way.

Hmm. I know that the Americas map has been included... does anyone know if there'll be historical scenarios? I'd like to see what might have happened if parts of Eastern Canada had sided with the Americans. The world would be quite a bit different right now.

No dude, you declare independence and if you survive the Revolutionary War, you have won.
