I've decided to try my hand at modding and want to start simple by adding some new names to the Great People list.

I found the file with the names easily but I can't tell how to specify if a name is for a Prophet, Artist, Etc

Am I missing something or is their no specification in the file?

Which file are you looking at? In the UnitInfos XML the names list for the Great people should be at the very beginning of each Great Person type's entry.

Tiny problem. The names I added appear in-game but it includes the TXT_KEY_GREAT_PERSON.

I'm guessing removing that from the in-game name takes another edit?

Did you check, if the TXT_KEY... in the UnitInfos really machtes the TXT_KEY... in the textfiles, and that there's no typo in it?

That was my problem. I hadn't added the new names to the UnitInfos.

Did that and they work fine now.
