If playing a PBEM game, how can you set up the game so that every player can see what happens inbetween human player turns?

Currently, only the last human player can view the movements and attacks that occurred. Everyother player will just notice troops missing.

You can't. Just have one person be first and one fifth. That way the first person can watch the AI from 2-4 and the 5th person can watch from 6-8. They are 'working' on it, but it is very hard to fix.

I think that's the idea of it; the only way to do it. Of course you should also be able to see if a human player walked/sailed by your border or not.

I don't think it's easy to add for the programmers, but I also think it's a necessity. For me it's one of the most exciting things: will the importance be less or more important than the fact that the game is finished and another patch probably won't have an effect on the sales.
