Well first a foreword: I usually play like this: big empire , building everything and build all wonders (regent) not too much civs on the map ,always huge ,going to war only late in the game.
But i am going to change: this time im gonna play tottally different
I always normally play as the French and such

Any of the three, to give you a different flavor, but since all 3 are scientific, they're not that different. I'd avoid Greece, as they are also European, and very similar, with a strong defensive unit (just earlier). Korea would be different, with an artillery unit. The Ottomans have a UU in the same age as France, but it's an offensive unit. In either case, I'd recommend having cultural siting turned ON, and using other civs from the area of whomever you pick to get a fuller experience of the flavor.

Of course, you could put in Frnace as an opponent! ;-)

I think you should pick the ottomans.

You should go with the Ottomans. Their unique unit beats Greece and Korea and so does their traits.
