How to play vanilla civ 5 without patches if you have Civ5 complete version?

On the main menu, select the DLC button. In that interface, deselect whatever content you want to deselect, exit back to the main menu and start a new game.
Note that if you exit (turn off) the game and relaunch the game, you will have to do this again. If you want to make those settings last between sessions, you can go to your Steam library, right click on Civ V, go to the DLC tab and deselect (remove the check mark under the "Install" column) whatever components (including expansions) you don't want to appear in your games and Steam will automatically uninstall those components. If you later want to reinstall any of those components, just go back to your Steam Library, Civ V Properties/DLC and reselect the deleted content and Steam will automatically reinstall it for you.
