    Make yourself more than 100 custom maps and pull them at random. By the time you see one, you will have forgotten what's in it. Most of the time. Or maybe it's just us old folks that forget.;)

    I like to destroy their capital, too. If it is in a good position, I usually bring a settler up to replace it. Don't have to worry about that one flipping. If the capital has an important wonder, I consider alternatives, but usually the capital is history.

    I would wait awhile before drawing any conclusions. I've found that starting position is the most important factor, and they may have gotten better terrain to work with in your more recent games. Anyhow, there must be some logical explanation.

    forest planting

    I agree there should be some further benefit to planting forests. However, trying to coordinate cutting them down to take advantage of shields, well, that takes too much effort (read, micromanagement) to be a strong strategy.

    Depends on what you mean by "lose" - I can beat the victory conditions every time on deity, so I have to set my own objectives. But, if I miss getting a key wonder, then I consider it a loss. At the high levels, controlling the wonders is not as easy, but everything else is a piece of cake...

    Sun Tzu must wait until you are in the Middle Ages. You'll get there faster with an expansionist civ, such as the Americans who can also start building the Pyramids right away. If you must have Religion then that won't work for you. Religion/Expansionist is not the best combination.

    The Great Lighthouse is great, indeed. It allows you to end your turn on a sea square and avoid attack from barbarian or other AI galleys, because they won't attack that square.
