When do you catch up in tech?

On Immortal, the standard catch up times are whenever a big beaker tech is discovered. So the spikes usually come from NC / Universities.

King, and Renaissance. Usually once I get NC, at best one or two other civs get into Renaissance first, but then I easily pass them.

Emperor and usually Renaissance. Ocassionally Medieval and very rarely in Classical. If I Great Library slingshot to NC (especially as Maya), I can sometimes hold it for the rest of the game.
