I noticed this in the Napoleonic Europe conquest; don't know if it applies to others or not.

On the last turn of my golden age, the extra shields disappeared from the city map display, but remained as part of the city's total production. Also the 'Golden Age' indicator in the lower right corner disappeared. However, it was not until the next turn that the advisor popped up saying the golden age was ended, and city production returned to normal (matching the number of shields displayed on the map).

It's not just that the bonus shields are no longer displayed, either; they're independent of the map tiles. So if you take all your workers off of shield-producing tiles, you still get the bonus shields you got the previous turn. This means you could get more shields and/or more food than you ought to be able to on the last turn of the golden age, by having all your workers on plains/forest/hills the turn before, and then moving them all to irrigated grassland/coastal squares on this turn, retaining the shield bonuses. But it's a minor exploit, since it only lasts a single turn.
