Considering the bonuses the AI receives at these difficulty levels, is engaging (and winning) in at least one war necessary to take away an AI's advantage?

On Immortal, no, standard 4 city tradition - rationalism science is king tactics is easily enough to overcome the AI edge even without a war. Especially with the addition of food cargo ships (or if non-coastal caravans) to the capital.

Also note that a badly timed offensive war slows you down.

Even on Deity, it isn't required, but that isn't to say that every game will be able to avoid it.

War is always necessary because of the AI's tendency to forward settle you. Never let them steal your nice city locations.

Actually you can avoid them forward settling by simply NOT signing embassies until you are done founding your first ring (if liberty wide) / all planned ones (if tall tradition)
This will avoid telling them about how good your land is until they get around to sending a scout to it.

War may not always be necessary, but those AI people sure are awfully arrogant just because they were given all those bonuses. It may be good to whittle down their population a little bit. They can't be so arrogant if they're dead. I'm doing the civ world a favor.
