Is it possible to add more Founding Fathers, or can you only change the ones that already exist?

The XML files were clear enough, but simply copying one FF and changing his name cause a CTD.

You need to ensure links to artwork, text and buttons is correct and available. Just copy pasting without changing the main tag name will cause a CTD.

Thank you for answering me. I did figure out that it is possible and that a lot of things are possible just by reading what the other mods have done.

It takes a lot more work than a simple edit.
