Can you have more than one worker on the same tile?

Can you have more than one worker on the same tile? How do you know what you get (how much shields, food or trade) from working on a tile or your city?

1 worker per tile (all others work as vendors in the city +1H & +1T i think)

And what about how much ressources you get per tile, city?

That varies based on what kind of tile it is, if it contains a resource, and if you have building bonuses (a workshop yields +2 hammers from a hill, for example).

Workers in the city (the only that can have multiple workers on it)

give 1 production and between 0 and 5 trade based on population

yeah, the only tile where you can have multiple units is in the city, put you can always expand with courthouses give you more land to work in.

What about workers from different cities? Can 2 workers from different cities work on the same tile, i.e. can two cities share a tile? For me it looks like yes they can so far.

Nop. No shared tiles.
