Choosing the other civilisations

So I bought the game today for the PS3 and so far have been impressed. Just a couple of things I'm not sure abuut:

I want to start as the Spanish and play against the English and Russians. How do I do this? From what menu?

I also want to play just a game of me as 3 civilisations without any computer players, how do I do this?

I also want to play a game where it is me as the Romans against the Greeks and the Japanese, where the only way of winning is Technological Victory, and no civilisation can win with any other type of victory, because I want to build a spaceship.

You can NOT choose who want to play against
You also can NOT choose how many Civs you want to play against.

Wait! You can play as more than 1 civ?! EXPLAIN HOW!!!!!????!!!!

... please take you time and read. You cannot play with more than 1 civ at the same time if that is you question.

I read through he said that he wanted to play a game as 3 civs by himself, to me that sounds like he is 3 civs.sorry if I don't fully understand.

He wanted to play as 3 civs by himself, but it is not possible to do so.
