I wonder, why can we steal great prophets but not great generals? Can we steal other GPs as well?

Maybe to give a chance to capture them back. Note that archaeologists can aslo be stolen, but they're barely great people.

GP is the only great people you can capture. Also, Missioners and Archaeologists are not Great People.

Makes sense from a real-life perspective. A great prophet will support his religion no matter which country controls him. Capturing a general and convincing him to fight against his former country would be a bit trickier.

Sometimes I capture a Great Phopeht for I just want to disband them, and it doesn't provide any moeny

Neither does a captured missionary or inquisitor. Only captured workers (including captured settlers that become workers) give gold, and only if disbanded in your territory (like other units).
