I've wanted to play like I did in CIV 2, with a ton of cities.
I've also wanted a lot more CIVs.
I did a game with a large map, 10 civs, and had 8 cities.
By the late 100s it was very very tedious.
Mind you, I did not have quick combat/movement enabled, but is this generally the case that a larger map, with more civs, and playing wide, can very much slow it down too much?

Yes, single player is slower later because of the AI. It's sort of regardless of how wide you go, but more the fact the AI always REXes anyway because of their bonuses and it makes the AI turns take really long later game anyway

turn on quick combat/movement and it'll help at least. But yeah their turns can still take a minute sometimes late. I don't mind too much though. The sacrifice is worth it playing in a big world with large empires. Sometimes I feel like playing a huge world and I rarely regret it. :)
