1) To rename a unit click at the yellow highlighted unit name. (Right lower corner of the creen, when unit is selected) You will get a popup you can type the name in.
2) I don't think so... They pop as Converted Native / Colonist, which can "Only Defend"...
And i seem unable to make them Soldier... (Tho it might be Dales changes ?)

In Vanilla i usually send them learning in the same village they popped up.
Except i needed them specifically as Natives for Trapper-Substitute (The gatherer Professions you can't get on some maps...)
If you set missions in Villages with usefull professions, it's immediately useful. If not, you can still clear profession, turning him to a free specialist.

Rename or change orders? Just select another route and that's all, there are check boxes.
Teach him a skill and then you can make him a troop.

So by turning the Wilderness proven Native into a Sugar Planter, i will actually increase his combat ability
(I know you are right... Still sound odd...)

The problem I had was with trade routes quitting when they ran into the king's men after independence. I figured if I had my wagons named for the routes they were on ('Quebec sugar' etc) it would make it easier to keep track of which ones were still running and which ones had stopped.

But you may check all your wagons separately. I do not have more than 3-4 automated wagons per game.

I had 10 automated routes running at DOI and half of them stopped immediately. I'd just find an empty wagon sitting in my fields with no indication which route it had been on, which is why I wanted to know how to name them.

You can name any unit in Col in the same way you do in Civ IV: click on their name in the box with the unit info. It will appear a pop up asking for the new name.
