Okay then, would really super duper like to see Vietnam and Kongo.
Would also love Argentina, Hittites, Bulgaria, Mexico, Comanche, and maybe Israel.
Finally, would find it fun to play as famously violent or insane rulers (Like Vlad the Impaler, with, as my friend suggested, a very morbid unique improvement that consists of poles and... you know...).

For myself, I think all the major "empires" of history are reasonably well covered. I'd like to see more primitive or raider type cultures, but they'd require game mechanics that Civilization currently doesn't have.
I think the last two civ picks will be by definition pretty lame.

By the way, 'Anasazi' was never a city. The "Anasazi" era of the Pueblo people is an interesting piece of history though and the capital if going on the Pre-Colombian history rather than post-Colombian ought to be Chaco Canyon (Capital of the Ancestral Pueblo Empire before it split), or the later iteration under the city of Mesa Verde
If they wanted to go even deeper, Pueblo Bonito in Chaco Canyon would be the best for the capital

Italy (but I'm ok with getting Venice instead)

and one we'll never get Tibet
And if there has to be a native (north) american civ in the expansion I liked the Pueblo the best after reading about the different tribes.

Olmec- the mesoamerican babylon/ sumeria, incredibly advanced for their time.
Nepal- I made a whole thread about why they should've been a religious side in GK.

Tibet- like nepal, but harder to figure a UU out
