When you attack and you think you're going to lose, press B (on Xbox 360) to retreat.
But be wary retreating, if you do so, you automatically give your enemy 3 experience points, which in most cases mean they get an automatic upgrade.
This is changing in patch 1.2 in multiplayer so it's same as if they had just won the battle normally, but will remain 3 experience points in single player.
Sometimes have to decide if its worth saving the unit or not.

I've noticed if I retreat and then have a fresh unit attack the now damaged enemy, I almost always die, even with superior odds.

Hooray, I'm not crazy!
I lost a 3.5:1 odds thingy, had my friggin' bombers somehow knocked down my some pikemen.
/Facepalm.

The guerilla upgrade affects attacking, not defending. But assuming they did use their free upgrade on a defensive bonus, it should be reflected in the combat odds that turn, but it isn't.
