So I joined I&B 2 a couple of weeks ago. So generally how long it takes for one of these games to go from "signups closed" to "game opens"?

For most IOTs it's typically less than a week.
For IOTs run by me, it could be anything from three days to three months. On a related note, I'll try to get the IB2 game thread up this week.
