I usually keep Cities I conquer so I would definitely keep it, let it revolt and retake it later. I only raze Cities if they are too close to each other.
OP you could take a different approach in the early eras and then dominate in the later eras. I usually play on emperor / standard speed, but I got interested so I started a new game with the same settings as you.

If you build/conquer many cities you can compete with Russia/Kongo/Greece for Writers and Artists. The more Cities, the more Theatre squares and Art Museums you can build. So an Early Archer rush is a good start IMO.
To have fun when I play is the most important for me as well and I don’t necessarily have to struggle to have fun. By the way continents, standard map is my favorite setting as well.
An early Archer rush can be done on Deity as well. Just don’t build any Settlers until you have at least 6 Archers and 2 Warriors. You need a Builder though.
I can’t see how you can do better if you avoid an early rush. I just started a game yesterday and had a few saves so I could reload and try a different strategy.

Yes, I always start by building Monuments and Granaries, in that order and in every new City. Only one exception from this and that’s in my Capital. In my Capital I usually build them much later as I have other priorities in the early stage of the game.

Usually I build it in one City so I can build the Terracotta Wonder. As I only build military units from Production early in the game I can’t see any reason to build more Encampments. Later I use faith to build my military units. For City protection, I build City Walls and Ranged Units.
From my experience, Holy Site Prayers are very good when you try to found your own religion and a couple of times it has helped me to win the race for a Great Prophet.
