I have the same issue on single player. Unless I'm playing at a ridiculously low level, small map, high speed, and advanced start, I never stick with it for more than half an hour. Oddly, I never have this problem when I play hotseat teams with my husband, because then we talk strategy together.

What difficulty level are you playing on, again? Cuz if it's Noble or lower, the AI has no advantages over a human start. (No, seriously, you can go into the code and check for yourself. There are plenty of threads about this already. Just do a search for "cheating AI" on the boards.)

There's a lot more flexibility with those I think. If you want to go all-out though, I'd run Police State, Vassalage, State Property (no distance maintenance = good on big maps), and Theocracy.
