I almost never pillage. If the city is heavily guarded I will pillage 'army building resources' such as iron, copper, horse, etc. If it is taking a long time to capture the city I will pillage the improvements directly around it to starve it which keeps it from building any new units.

I played Washington once. I took all his cities except his capital and one. We had been at war for 5+ centuries. I was starving his citizens in his capital and had it surrounded. I demanded the other city in exchange for 10 turns of peace. So, almost a century later, America was destroyed.

I always use/found Christianity because I usually get beat to Buddhism, Hinduism, and Judaism and because the faster you get to it the faster you get Theocracy so other people can't spread their state religion into your empire.
