Altering game text

Which text files are used for what purpose? I know that the civilopedia text is for the civilopedia, and diplomacy text for diplomacy ... But what files, if even possible, can you edit to change things as they appear in the game itself?

For instance, if instead of gold, I want it to say Koku - even in all of the menus, etc. Would it be the labels text file, or the script?
Would editing any ot these files help at all?

You will need to change Gold in both labels.txt and script.txt.

Thank you, I really didn't want to start messing around with files only to have them not work.
