I think it's unlikely that we'll get full evolutions for everyone like we did for China and India. We'll probably not see those two touched again until much later, especially when other long-lasting civs (Greece, Egypt, Italy, Ethiopia etc.) don't have their trees fleshed out yet. (Other than the ones mentioned, I expect most other civs to get the Greece > Norman > America treatment) My guesses would be:
Greece > Byzantium > Russia, Ottomans, or (hopefully) Modern Greece
Egypt > Abbasids > Ottomans, Alawiyya
Persia > Abbasids > Qajar
Rome > Venice/Florence/HRE > Italy
Aksum > ??? > Abyssinia/Ethiopian Empire
For Latam, I'd personally love the Taino to be Exploration Age, but with Spain, the Pirate Republic, and the many island civs that are already in Exploration, I'm not confident its happening. Taino are going to be slotted into antiquity for the same reasons the Mississippians were. Gran Colombia has a decent chance of returning in the Modern era as it matches the time period the age is going for. I'm also betting on Portugal being slotted into exploration and Brazil in modern. The Andes are the biggest wildcard imo. We might just see them settle for Gran Colombia for modern and have Nazca/Tiwanaku for ancient (if we get one). I personally want the Quechua to be included in modern.

Achaemenid -> Timurid -> Mughal could definitely be a viable “historical” path.I love the Alawiyya proposition, I could see it happening. I agree with pretty much all of your likely pathways. I could possibly see a Timurids civ to give Persia a separate path from Egypt; plenty of architecture to build from and zamburaks are pretty neat.

Personally I don't need two exploration Mongolian civs. But if they can make it mechanically interesting enough and give us gun-camels, I might come to accept it.

I think Bulgaria was chosen because they wanted something new right now for that region. I fully expect Poland, Hungary, and Byzantines to eventually show up as well. Poland however I can see possibly them putting in Modern.I think the choice to include Bulgaria over Poland or Hungary is pointing towards the Gokturks in Antiquity. The Bulghars doubling as both a Turkic and later Slavic group make them a perfect pathway for current/future Central Asian and Eastern Europe civs.

These seem likely imo. Alternatively, Bulgaria could be chosen as a replacement for the Gokturks (or any Turkic equivalent). The ethnic & cultural mystery surrounding the Xionghu make them a good wellfront Antiquity civ, especially with their Han rivals being in the game. (Scythians/Huns would be more likely had we got Poland/Hungary)
