Are there any good tutorials?

Milae has let's plays, and he's a very good player, but I wouldn't call it a tutorial.

Yeah, i tried him and I'm sure he's a good player. But Even in his "early game " series he starts out giving instructions about rudimentary Civ 5 mechanics like what tile yields are. It's a shame there are no instructions about the actual changes in game mechanics. For instance, I've only played a couple hours, but out of any early game pointer I would give, would be to tell a new player that warriors cant pop ruins and that Only pathfinders can. Not only that, but once the pathfinder is upgraded to scout and then further upgraded to heal while moving and embark it can basically wipe out just about any barb opposition. Or that you need to bee line a way to get paper to have any hopes of befriending city states. Just those 2 things woulda save me hours of restarts. Dang I miss good tutorials.

It's difficult as well because the game is always changing, so tutorials would go out of date fast.

Milaes is 4 years ago, Potatoe Wiskeys is 7 years ago,,, and even though Michaelgo is only 2years ago and I cant understand half of what he's saying. That's the pool of resources. I get your point, but,,, yeah. I understand I'm late to the punch here as I'm just starting to play this mod now, but there hasn't really been a good instructional tutorial since the beginning. But please don't think I'm I'm trying to be rude or whining. I'm just an old fart dating back to civ 1 and recall a day when finding a simple walk through was simple. It's by no means just The Civ series. For some reason people these days content creaters just make "lets play Blah Blah Blind" streams. Even old games like Deus Ex or Max payne. Regardless this mod is awsome and I'll just weed through the Pedia and be thankfull that the creators made the best Civ mod I've ever seen. I'm actually shocked something could be this good after the 1st Ryes or Pies. Thank god because Civ 6 and from the looks of it 7 is not my cup of tea.

There's a guy on YouTube called kil18, something like that... he does "let's play VP" in a really cool way, but try not to pay attention to the sports announcer's voice, sometimes it's really annoying and forced.
 
For changes to beliefs, policies, techs, buildings, etc. the in-game civilopedia helps a lot. The wiki is also a solid resource on that front: https://civ-5-cbp.fandom.com/wiki/Beliefs.

I don't think there's an easy way to sum up the various mechanic changes, nor is there a guide I've seen on YouTube for that, but for specific questions you could always ask the quick questions/quick answers thread. You could also ask here and I'd be happy help.

The hardest new mechanic to wrap your head around is probably the happiness system, I could give a quick rundown if you'd like.
 
There are more things changed than not. It'd be pointless to have a "change list".
 
I used to watch a lot of VP played by a polish guy but those vids are also very old by now (and was just lets plays).
My main difficulty was to get good at wars, it took sooooo long time and I had to relearn several times (maybe Im just a bit thick).
Play a lot and turn up difficulty as you go helps.
Maybe I should try make something some day, Im not near Milaes level but I tend to be a decent teacher, Im sure Id get complaits of being slow :D
 
The Steam guides mentioned earlier have been a fantastic help when I started playing VP.
It is slightly outdated for most civs, but unless there was a massive civ overhaul like France or the Aztecs it should help you massively. Start a few games with some simple civs that have not evolved much since the earlier VP versions (for example Venice, Netherlands, Sweden), and reading those guides will give you a lot of great insights on how to play VP.
 
I find in the in game civilpedia your best resource.

But for certain game mechanics, such as happiness, if I ever had questions the forums were good at educating me.

I'm in the same boat as you. The only reason that I came back to Civ V is because I do not want to buy or play Civ VII. I left Civ V when Civ VI released so I never got to mess with the VP Mod. It's a completely new game for me. Now I have to grind. I play the same exact Civ, 80-100 turns before restarting. It's really weird playing Civ V now as it doesn't look or feel like what I remember, and I put over 5000 hours into it before moving to Civ VI.
