Oh dear. I tried going to the "War Academy" pages and...I don't find them very helpful. :/

Are there any good battle strategy videos on Youtube? Specifically I'm looking for something on how to:
- how a stack works
- organize a good stack
- if it's ok to attack with a whole stack
- what unit should I attack with first? and which target is it hitting?
- what promotions are good, or bad
- are multiple stacks ok or just one big one
- etc.

Most I've seen are Let's Plays and I'd rather not waste too much time

I HAVE seen this one for beginners, which is alright, but that's about it. He doesn't go into much detail and it's very situational as to what he's demonstrating:

War academy stuff is a little dated and some applies to vanilla game.

Construction rush without elephants:
- Focus on 10+ catapults. They are main attacker
- promo is most important on catapults. Build catapults in city with barracks (don't have to build barracks everywhere)
- axes to clean up (city raider 1 useful but not essential)
- horse archers if you have horses. Need much less axes then (mainly only for stack defense)
- 1-2 spearman if you have horse archers (stack defense)
- few archers (or lots) if you can't build many axes. They are decent for cleaning up
- I like to first attach big stack with 1-2 catapults with barrage promo
- Then attack with city raider catapults
- Don't waste too much time bombarding defenses. Maybe 1 turn (if they have a big stack).
- Cleanup with axes/archers/spears/horse archers when odds are > 80%

Construction rush with elephants:
- You need bit less catapults (replace those hammers with elephants)
- You only need 3-4 elephants for initial attack. Horse archers or axemen do fine for rest of attackers.
- Rule the world. Elephants are the most overpowered unit in the game.

Engineering rush:
- Need ~8 trebs. Give 2-3 the 'target' promo for bombarding defenses (castles are a PITA though)
- Rest of trebs you want city raider 1-2.
- Still bring similar number of catapults. They are very useful with barrage promo even in middle ages.
- Suicide a few catapults against big stack (barrage promo)
- Then attack with city raider trebs
- For non siege units, base strength is kinda most important.
- Knights (or even horse archers) are great because 2 movement lets them attack and then heal in the city
- maces/elephants/whatever is fine. You just need numbers to clean up after siege.

cannons rush:
- very similar to catapult rush. Mostly need cannons. Other units are to clean up (maces, muskets, knights typically)

Here is recent game I played on immortal. I even added the timestamp for when war starts.

Julius Caesar attack with catapults/trebs/elephants/maces/praetorians.

Same game, longer war against against Shaka with cannons, knights, muskets, maces, and later adding cuirs.
