Buildings to restrictive OR is there to much Vegetation?!?

I keep finding my settlements don't have the ability to put things where I want them. Why does my Hatshepsut/Egypt start have no flat desert next to a river for the Pyramids? Or the one desert tile I do get, only 1 adjacency bonus....

When I play Mississippi, why can't I find a flat spot between 2 Resources for my Potkop? Is 2 to many for an adjacency bonus, because the game keeps building maps where I'm destined to only get 1 adjacency bonus?

If I could chop a forest down that would solve part of the problems. It wouldn't fully fix these weird maps but it would help.
 
I tried Hatshepsut/Egypt start twice and got no desert at all. After scouting almost the whole continent I finally found the only 2 places where the Pyramids could be built.
 
I have never liked wonders needing a specific tile requirement. I feel you should be able to plop the pyramids down on tundra if you want.

I also don't like that you can't cut down a forest and farming that grassland tile. Mines, clay pits, pastures, quarries, etc. I understand needing a specific type of tile. But vegetated should offer a choice of farm or woodcutter so that a city surrounded by forest shouldn't be hindered to no growth. I could even see giving rough terrain offering a choice between mine and quarry but not sure that would help much as building typically boost both.
