China and Saladin are at war. It is early, but I want to join on one side. "Joint War" only leaves a choice of war with someone other than those two fighting. Is there some mechanism to join on one side or the other? Can I induce one of them to "invite" me?

It is not possible to have a joint war once they already are at war. You can of course declare war if that benefits you. I think I have taken cities with my scout doing that before

Yes of course you can but not how you want.
You denounce the one you want to go to war with... this gives you +8 with the other which is better than +6 for a joint war.... then go to war
    ... same result, better diplomacy
