Love this game so far beginner with only a few games under my belt so I'm still learning.
 
Religion is a pretty opaque system. You aren't asking specific questions, so maybe I can say enough wrong things about it that someone more knowledgeable will have a better basis for explanation as they correct me.

You start with paganism unique to your civ. If you are tempted by the game's recommendation to build shrines, citizens will start converting to paganism. This seems to have no benefit except that if you manage to keep that religion happy, they will reduce discontent. You can only build one of each type of shrine.

Certain actions taken in the game can also cause religions to be founded in one of your cities, making it a holy site. Note that it is possible to have multiple religions founded in your empire. Religion will start to spread on its own. Again, if you keep the religion happy, discontent is reduced. If it's unhappy, discontent increases. You can choose to make one religion a state religion, and you can unlock a tech to convert characters to the state religion (this will improve their opinion of you). Once you found a state religion, other religions will have a negative opinion modifier because they are not your state religion, and religions founded in other civ's means that civ will also have animus towards you.

Unlike paganism, you can build disciples for a religion if the religion has spread to that city. The disciples will have the ability to consume themselves to spread the religion to a city (in case you aren't patient enough to wait), and can build religious buildings (monasteries, temples, cathedrals) which mainly generate culture and happiness .Disciples can also allow you spend a bunch of civics to found up to three beliefs, which grants benefits (mostly making religious buildings and their specialists more potent).

Also note that many wonders have to be built in a holy site city.

Laws play a major role in how religion will work in your civ. Tolerance can make it beneficial to have multiple religions active n a city. Conversely, Orthodoxy lets you purge non-state religions. There are also laws to enhance paganism, make it a state religion, and build unlimited shrines of all types.
 
I generally find sticking to one religion is easier to manage.
