If you play on a lower difficulty you might want to pop him sooner though, because you might get the prophet so early that you get to choose something like feed the world or choral music (essentially impossible to get on deity on a consistent basis and outside of extreme luck). Still, work ethic and crusade are generally imo by far the best picks, even if you can pick those others.
Never knew that - so the first religions founded get to pick the "best" beliefs and each one can only be chosen once. Good to know.

Yes, its first come first serve for the beliefs, and the AI really has a hard on for feed the world and choral music, and will without exception always go for those first.
Getting the first religion on deity is nearly impossible, but for lower difficulty play, its possible to pick these up if one wants to play with them.

Don't forget the warrior monks belief! I find that in my games AI always goes for that one.
 
Seems you're both correct, in my current game they picked Feed The World, Choral Music and Warrior Monks in that order, leaving me with Jesuit Education, something I never used before..

Sounds about right, warrior monks is often the third one to go.
I wish they rebalanced the beliefs a bit though, because work ethic is never chosen by the AI, while also being the strongest pick of them all.
It would be far more interesting if all beliefs were more equal in power, and that the AI had less of a strict priority when selecting them.
The BBG mod does a good job in rebalancing civ 6 beliefs, but I cant remember on the top of my head if they change the AI behaviour about which belief they will prioritize selecting.

Unfortunately the AI tends to pick buildings rather early as well, especially those that boost food and production which thend to be more or less out of the question on higher difficulties.
They aren't too keen on Stupas and Mosques though, which I would argue are the better picks in a lot of cases.
The pagoda isnt too bad if you just want to brute force world congresses though.

Either way I wouldnt prioritize the buildings at all, since getting the right follower beliefs and enhancer beliefs are generally way more important (work ethic and crusade I think are undoubtedly the best), followed by a good founder belief (especially one that boosts culture or science).
Worship beliefs (buildings) are usually low priority because they are low impact for your game, and it takes a good while until you can actually start building them since you need a shrine and temple first anyway (and probably have more important things to build in the meantime).

Or if you want to hold a lot of enemy capitals - I often found myself in the negative in long games, the Pagoda is a quick fix for that.
