I'm working on my custom civilization, and I as wondering if it would be possible to make a civilization have a trait that gives them double coast yields, making them more suitable for coastlines/islands.
I am not sure that it is directly possible to double the yield of coastal tiles. What you could do is give them a bonus to that tile type though. Follow the example of Russia's bonus on Tundra. It should be easy enough to switch out Tundra for Coast and update the yields to what you want.
