I always play with grid and yields turned on; one hardly notices the grid in Civ 7 anyway. The yield icons are a bit more jarring to be fair. I might turn those off once I get more accustomed with this iteration of the series.

I play with grid on, it helps orientation and planning and the grid is unintrusive.
I used to play with yields on, helps with planning and seeing your empire grow, but Civ 7's are kinda inflated and convoluted and everything's bit yield here, bit yield there, so I turned them off, finding them pointless.
Always with Resources, they are unintrusive and informative.

Grid off because I think it's prettier without. Also yields off because they're not as important to always have visible as before, and resources on but remapped to r because it's closer to y and g and makes more sense imo :p
Hoping for an option to hide the entire ui sometime also tho, so I can look at how pretty my cities are with as little interference as possible

I play with it off unless I forgot to turn it off since I last booted up the game, as it doesn't remember the setting...

I try to play with grid off, but it keeps reappearing.
My default setting would be grid and yields off, resouces on. Everything on with the Settler lens. I don't need yields outside of city management (where I would like to see them when placing a building too, not only for improvements) and expansion plans.

Grid on. To me it's a board game. It would be like if chess boards didn't have alternating colors AND they didn't have lines letting you know what counts as a square. Knowing the squares in chess never turned me off from chess, and knowing the hexes in Civ is the same to me.

I try to keep them all turned on, but yields turns off by itself constantly and tbh I've gotten used to it not being on and won't even realize. In previous titles they were a must but not as much now.
