Flanking

I've been perusing the forums for a while now and using the search tool to try and help me find a post that explains how flanking works. I haven't been able to get my horse units to flank catapults/trebuchets/cannons, but the AI seems to have no problem destroying a stack of my cannons inside a large bunching of units. Could someone please help me out and explain this mechanic to me?

Perhaps you are flanking against units in a city or fort? That won't work wrt damaging siege engines.
