Let's see their best bonuses:

Americans:
Start with GP
½ price units

Counters:

Aztecs:

Start with 25 gold
Units heal after a battle
Temples gives +3 science
Half price roads
+50% gold

All their bonuses are worth. At the start they can do like Americans and use the auto-heal to reach barbs easier. Building horsemen is ok, but be careful and use all tricks you can use to kill their horses if you meet them. Don't let them taking a capital easy and ask the AI about them if they know them, follow their moves and if they know an AI it could mean they are going to attack it. Waiting few tiles away is ok, but take capital if possible, if they can't see it.
They haven't got other bonuses to help in the ancient era more then the GP, while you got units healing after a battle. That's not bad, because you can break the half price units bonus. To do the trick you should expand enough, choose good spots only where cities can still produce or grow. Build few temples if possible in cities with high population and build libraries in cities with more science. Culture is going to help you in defending some cities and getting more GP and science easier. After getting the temple, if you got 2-3 water tiles it's good to build the barracks but maybe it's better to build a barracks only. The real defence comes with ½ price roads, yes, I mean seriously. If you don't want to suffer the knight rush, you should have at least 2 units in the city that won't be overran. Then, the gold will help you rushing roads and sending units. That's like having almost all units in the same city, and that's really really helpful thank's to the healing after a battle. Legions or Catapults can help, just remember to leave 1 unit in the cities near coasts. And remember, if they stopped researching technologies and they take a city they will get a technology if you got the tech lead. It's not hard teching if you take at least 1 capital, then expandin with the usual 2 trees – 1 grassland trick for 5 turns.
Then, you can go for an easy economic victory, just remember about defending and putting 1 veteran spy per city , then modern infantry and roads can still help. If you remember about this, only using a lot of units he would break perhaps the first defences, while you send more units. I suggest you teching industrialization and corporation, then combustion. Use mass of riflemen to defend or wait for modern infantry if the American is not attacking. It's not on details, this is just simply how to defend, then you can read my Aztecs strategy, I will try to improve it.

Spanish:

Navigation
+50% gold (industrial era)

Also the x2 gold for exploring is good at the start. Yous should defend at the start to give them problems. They can horse rush thank's to the extra gold, and after you get 100 gold it could be useful. However, that's not needed, the trick is defending to the horsemen, then expanding to one tile cities. Maybe one city or two in the mainland with huge production, like 2 hills, can be useful to defend the capital. One tile means ½ attack, then, it's like giving the Americans just the ancient era cost, or at least, it's ½ of attack power. 1 archer is enough in ancient era, because it's hard to reach these capital. If he wants to bring units, he got to use a galleon army to be sure at least, and you should have cruiser or have a veteran galleon army (13.5 v 9 or 6). However, 1 archer army in the medieval (7-8 technologies) is ok, but if you want to be sure, a pikemen army is ok. Don't sell the archer army. If he attacks with 4 knights armies, that's 9 * 4 = 36 attack. Archer army and pikemen army = 30 defence. Let's add +3 defence for the archers and +6 because you can heal them meanwhile. You should defend and beat all these armies. He will hardly attack again. However, you don't need many defences, maybe you can put a galleon next to the city where he can't see it, if possible. Attacking 1 tile cities is not easy, you should know, then, you are safe. While you research technologies, you should keep building units in your 2-3 mainland cities. 1 barracks is ok, and I would suggest to build it in the capital. Why? It can't be flipped and you won't give it to the enemy. Use other cities to mass produce units, build them and surround the cities so that he won't destroy you really easy. If you defend the boarders with 2 units per tile, you could defend well. It's not easy, but it's not hard to do if you got 6 production. I also suggest having a catapult army in hills with 2 units at least (armies not needed), so you can beat maybe 1 or 2 armies. Now, staying in defence is not the trick, if you can attack the Americans with 1 catapult army, 1 archer army and 1 galleon perhaps, you are going to give some problems. While you do this, leave the city with nothing and you choose: If you got enough production, build archers. If you haven't got production, get gold or science (don't waste turns on food). Keep moving around his cities, and the answer is too simple: If you press him, he won't have 1000 gold to rush units everywhere. Militia is not enough and if he is using his time for militia, just end the turn. This is not bad, you can do it, and it's not unfair as other glitches. You just don't want to leave him using 2 minutes per turn. If you attack cities, you are going to give him many problems, and he can rush units then sell them, but remember, he is using gold and production in that moment, and he is losing cities. If you just press him and keep changing aim, he would stay in defence and it would be hard for him to attack you. This gives you time to defend.
This way should be ok, and if you know he is still defending with militia, remember, fundamentalism or galleon fleet is going to let you overrun his units.
If you reach irrigation first (really easy to do), you are going to do a good job, then expand with code of laws with your capital or other cities. Still 1 tile cities is better, and you find a lot of them with fish, dye and whales. In industrial you get a nice 50%, then if you get currency first in a good gold city, use it to produce gold and start rushing libraries after you got 10-15 cities. 10 could be ok to do a good job. Use other 1-2 gold cities with no libraries if you can produce many beakers without them, and stay in democracy when you stopped expanding, and research then banking, steam power (build cruisers to defend your cities, and put them in the middle of 2-3 island cities. He can't unload units all at once, then you get time to react). After you got all Industrialization's prereqs, research it, and if you want, you can rush Oxford instantly. Wait few turns before researching another technology if you want to have bombers. They are going to help much easier, and now you can restart pressing him everywhere. Before you do this, it's better to have some 2 movement units like knights, or some archers/pikemen in your boats, to take cities. You can also switch from science to gold and get bombers if you need it. Rush East India company if possible, or trade fair in a nice gold city, plus bank and colossus if it's not too late. Use the artist to produce culture or flip a really good city, you choose it. Remember they will take it really easy if it is not so far from other cities. Then, you can finish them off, not hard to do if they have only riflemen and you got bombers.

This should be enough. I hope that helps
