For me it realy depends on my current situation.
Rarely. On a couple occasions I wanted a chance to play with those wonderful implements of modern technology I almost never get to use because the game is usually over by then.
And then there was that one time I played on in order to turn the world into one big pile of orange goo after I fled in my spaceship. But that's neither here nor there.
So, essentially, 'ef you all, I'm outta here'?
If I win the game? Then I drink a beer. If it is late game I might stick around for a turn or so to launch my nukes indiscriminately.

Never. Hell often I just quit, when victory would be assured. Not going through with it to see it happen.
Only to finish wars. It can get boring with no goal and all the wonders and techs are done by the end of my games.
Depends. Usually I like to stick around to cause a huge war with whatever remains, or see what happens if I continue.
But most days, I don't continue.
If I've won by something other than domination or conquest, then I will usually continue for 10 or more turns...just to see what happens (usually I will practically do nothing: minimal micro-management, builds I normally wouldn't during a game, etc.) I think if I have a really dominant civ, and I've won the game by, say, a space race, I see how long it takes before a world war breaks out. That's usually when I quit for good because, what's the point?
No, I don't continue the game after winning. I find the game very boring when I've already won because I have accomplished all my goals.
