increasing number of religions that can be founded

I would like to ask in which xml / sql file I can increase the value for total number of available religions.

On higher difficulty levels it is nigh impossible to found a religion, particularly in the absence of an early peity policy tree.

WorldSizes.sql , change the value of "SET MaxActiveReligions" of the size of the map you're playing on.
