I’m not at war with anyone and never have been in this game.
In this game I haven’t concoured anyone.

-75% happiness? There is something going on with UI. Could you try to disable some of those mods, start new games and check if happiness is still shown in percentages?

I’m going to start a game without those 2 mods I added before this game.
 
That comment from @tu_79 was directed to me. Normally the crime info should be there but for some reason it does not exist in your game.

Try to use only Vox Populi, no extra mod.

While my answer was wrongly directed at neo_arcadia, this one question is easy. Go to the city window. On the left there is your production queue. On the right there is the 'city focus' and 'manually work specialists', maybe hidden under a '+' sign. Unfold it, check manual specialists, and you are free to change which specialists are going to work.

If you have your mouse over the happiness indicator, you have a sum-up of happiness in your empire.

Inside a city, on the left side, if you have your mouse over the local happiness value, you have a sum-up of the unhappiness of the city. It gives you the current unhappiness for crime (ex : -5), the current need need per citizen for city defense (ex : 3 per citizens), and the current value of your city defense per citizen (ex : 2 per citizen). If then gives you from how much you need to increase the city strength to compensate the need.

Inside a city, on the right side, you can unfold a lot of things. One of them has an option "Manually manage specialists". If you clic on it, every specialist will be unasigned, and you by clicking on specialist slots, you can chose which specialist slot you work.
Also on the right side, you can change the focus of the city. If you don't like the current placement of your citizen (and specialist, if you let them automatized), try changing the focus.
(You can also manually chose where goes each citizen by clicking on them and or some empty slots)
