I haven't found any information about this so

I'm aware that the "Get over it" response when the AI asks you to stop befriending some city-state may cause war in CPP. What happens when you pick the other option: Does the AI hold you to not befriend any city-state that the AI is fussing over? (e.g. In a similar fashion as spying after not spying, settling after asked not to settle near them, etc.)

It's basically "Get Over It" will give you a temporary diplomatic penalty for telling them to "git gud", but they will respect your claim better than saying "sorry buddy" which is more of a semi-temporary penalty. Nevertheless, both options will get you a point toward denouncement if you keep doing the things they hate.

But the "Sorry buddy" option makes them take city-state gobbling more seriously?

Get over it has a chance to reset your diploscore with them to 0 doesn't it?

Get over it has a chance to reset your diploscore with them to 0 doesn't it?
It also incurs a diplomatic penalty(Your diplomatic actions disappoints them) that expires over time.
