More important to me than just their traits, I'm hoping for some suggestions to help me choose a leader who might've been able to become the head of the UN if they were alive in this day and age.

It's more a matter of there being multiple choices than too few.

I just won a diplo victory by all of the world being my vassals except sitting bull and his vassal. Everyone was Christian(which was really strange, it was the only religion that ever caught on) and once my vassals, I always gift them and the wars help them to become friendly.

I ended up going with Brennus for no particular reason. I have a decent spot of land (two, actually, once I expand) but now it's time to hit the PDFs so I know what the heck I'm doing.

A solid choice. Brennus has very strong traits. You can do the religion/civic swapping that Balbanes mentioned, and you can never go wrong with Charismatic. His UU and UB are pretty lousy, but you can't have everything.

Ramesses is my favorite-industrious for building pyramids and spiritual for switching civics. Ghandi is also a good choice. For an AP diplomatic victory, probably choose somebody who starts with mysticism then race for the palace while spreading your religion, I would think...
