iTunes does not by default support OGG Vorbis files that are used by Civ 5. What are OGG files? They are an open-source version of the MP3 standard (although some claim OGG may even be of superior quality per byte of space).
Here is a great add-on (with instructions) for how to put iTunes on your computer. Simply install the program linked to on this page with iTunes closed, then open up iTunes. http://www.howtogeek.com/howto/25333/how-to-play-ogg-music-files-in-itunes-for-windows/
The Civ 5 music is (for me) located here:
C:\Program Files (x86)\Steam\steamapps\common\sid meier's civilization v\Assets\Sounds\Streamed\Music
For people on non-64 bit systems, it's probably the same except it's Program Files\ instead of Program Files (x86). For people who did a custom install, you're on your own for the start of your path...but you should know it
