I don't believe the game will allow you to build any improvement other than what is required to get the resource, i.e. plantation/plant GP, otherwise I would be planting terrace farms on the mountain backed hills that have sheep. That is of course after you have discovered the resource is there. I've to take out farms before because aluminum or iron popped up.
Well there are worse cases than that. In one of my Inca game I had a hill surrounded by like 5 hills & it had a sheep on it. So instead of building terrace farm to get insane 6 I was forced to build a pasture.

sheeps give one food, and one more food with pasture, don't they? hill and farm terrace will output the same as hill sheep and pasture, or am I counting somehting wrong?

Hills with mountains around them get more food from the Terrace Farm. So a hill with a terrace farm gets +1, but add a mountain to it and it gets another +1. It keeps getting more food the more mountains surround that hill.
I think it will destroy existing improvements such as plantations or mines, but you can plop a statue down on any tile. I don't believe they will connect that resource though.

The Maoi statue does destroy the existing improvements and it does not connect the resource, but it can be worth it under certain circumstance. If the tile is surrounded by 3 other Maoi and you can work all 4 tiles, you gain 7 if you put a Maoi there.
