How do I include a quote from one of you guys` posts so it appears in that grey bracket? whenever I do I get those numbers and the word quote?

You need to ensure that the starting and ending quote tags (the stuff inside the square brackets) appears at the start and end of the quote. You seem to be removing the ending quote tag, hence the start tag appears as normal text.

That's just how it appears in the editor. Click on "Preview Post" and it will show you what it will actually look like after you click "Submit Reply".
