Obviously it depends on game state. @rkkn has

@azum4roll mentions "Food, production and gold all have diminishing returns."

How do you guys value the respective yields? Where would you put GPP/GAP/Tourism into this?

I personally value :c5faith: very highly until I found, enhance and reform my religion. The thing is, like WW, when someone pick your belief you are locked out of it.
To the point that I build shrine first in all my cities, monument second, until, well, all is done.
Getting your pantheon early also snowball your :c5faith: generation.

:c5production: is definitely worth way more than :c5gold:. I'm very happy to find early quarries near my capital, since it allow early :c5production:caravans which will help new cities to develop very quickly.

Yeah, sth like that. Tourism is similar to culture if I go culture victory, GAP is like a half of gold and GPP vary much. I always try to work all culture great people. Then i work scientists if I don't have great tiles to work, then diplomats (if I go diplo victory and after engineers otherwise), then engineers, then merchants.

This is a pretty reasonable approximation if your looking for a simple formula.

In reality, the yields all decay at different rates and so the comparison changes with time. Food is a lot more useful early in the game and very late (to work more specialists), faith starts out very strong and tapers off. Gold to me becomes more useful late game as you produce less units and upgrade more. Culture is the strongest yield but tends to wane in the last era whereas science remains pretty consistently strong throughout.

Yeah these seem roughly right , although I'm not sure about production vs science. you want a balance to some degree so you can make the new things you tech to. This would imply that religion that gives science per 2 pop is twice as good as the production version which seems wrong.

Production may not even diminish for warmongers since they are bottlenecked by happiness and public works when closing in on victory.

You can also argue for two different kinds of production....local and global. I would argue that global production tends to wane in the late game unless your in a real attrition war, but local production in a few key cities remains highly important:

1) A few cities cranking out diplo units for DV
2) Building the final wonder for CV
3) 3-4 cities building SS parts for SV.
4) capital production for remaining wonders.
