I have a love for colonizing in RFC, so I obviously love Britain

I agree.
It's super-fun for me to build a very large colonial empire.
I also have fun blocking the americans.
I rarely setle NewYork, leaving this to the Dutch.
I do settle NewOrleans, Chicago, and Denver: they have a huge production and their culture built over centuries blocks the americans very nicely.
After that they can vassallise or get crushed by my army.
However I don't like that the English have to pay a stability to own land in the USA.

I also enjoy playing the other colonial Civs (Duth and Portugese) too.
With Portugal you can build a very rich empire in south America, Asia, and Africa.

I'm playing as Russia in viceroy and instead of expanding east, I will try to conquer europe. easier said than done .

Russia can do it with the right conditions, especially if you can get other EU powers to fight against each other (and later against you on a second front).
For example a good war between Fance and Germany generally helps the process , and when Germany has all its forces on the west front, you can join the fight on the frog's side and roll over a tired Germany.

In my personal view the main problem is stability.
Conquering all continental Europe will bring you extremely bad stability due to the core regions of other CIVs you are occupying (Germany, Netherland, France, maybe Viking and Italy too).

With a careful diplomacy and wars you may be able to get france and Netherland as vassals and give then the German territories you don't want to control.
in this way you'll be the Lord of Europe without paying with stability.
