Set difficulty of Individual AI's

I've been having fun starting hotseat games where I am the only player and setting the difficulty of individual AI's Often having most of them set to king and then one or two set to diety to provide a challenging runaway to fight against late game.

However its kind of annoying to have to go into the hotseat where you are not able to view any of the other player movements after you end your turn.

Was wondering if it anyone would be able to bring the more advanced set-up screen you get when hosting hotseat games to the singleplayer. So i can set the difficulty of individual AI players while still being able to see their moves

Instead of hotseat, your should try just an internet game. You'll have the same control in setting individual difficulty levels, and there is nothing stopping you from launching it with no other human players.
